That reminds me of the South Indian man who made the best masala dosas out of a little shack outside an extremely sad and cheesy warehouse store owned by a right wing anti-immigrant Brexiteer - the most unlikely place to find exotic cuisine. But it was some of the best south Indian food I have ever eaten outside of India and amazingly cheap! He packed up during Covid, sadly.
Sounds like great fun making tamales. I am sure I had them when I was in Mexico but I can't specifically remember.
